What can you make with them that could ever be as good as Thursday&#8217;s meal <em>(sad sigh)</em>? We will take our lonely Tupperware containers from the fridge, to honor them one last time in a <strong>Parmesan-Crusted Thanksgiving Panini</strong>!  This is no average sandwich my friends, but a jam-packed holiday masterpiece that will have you wanting turkey &amp; stuffing again before month&#8217;s end! I make this sandwich every year, and feel a little guilty to say it is probably my favorite part of Thanksgiving! <img class="aligncenter  wp-image-6588" title="thanksgiving panini - 52" src="http://www.dinnervine.com/wp-content/uploads/2012/11/thanksgiving-panini-52-1024x678.jpg" alt="" width="819" height="542" /></p>
<p>Of our leftover surfeit, we&#8217;ll layer-up stuffing, mashed taters, gravy, turkey breast meat &amp; cranberry sauce (green beans &amp; Brussels need not partake this round). Key panini elements like <strong>Havarti cheese</strong>, fresh<strong> baby spinach</strong> and two, toasty pieces of <strong>Parmesan-crusted sourdough</strong> bread will make this sandwich complete. Stomach, you&#8217;re welcome&#8230;</p>
<p>This is easy, but getting the right toast to the bread is crucial! So we take a few extra minutes to optimize both sides of the sourdough, and we preheat most of the leftover components to ensure they&#8217;re good &amp; melty.</p>

This is easy & down right delicious!</p></div></div><p id="zlrecipe-ingredients" class="h-4 strong">What to get...</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">2 large slices multi grain sourdough bread</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">2 slices havarti cheese</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1/4 cup baby spinach leaves, roughly chopped</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 T butter, softened (for coating bread)</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">~1.5 T shredded parmesan cheese (for toasting onto bread)</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">~1/4 cup leftover turkey breast meet, in small pieces</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">~1/4 cup leftover stuffing</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">~1/4 cup leftover mashed potatoes</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">2 T leftover brown turkey gravy</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">3 T leftover fresh cranberry sauce</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">S&P to taste</li></ul><p id="zlrecipe-instructions" class="h-4 strong">What to do...</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Heat leftover turkey in small skillet on low, adding a little water of broth as needed, removing form heat when warm.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">In another small pan, heat stuffing & mashed potatoes on low, topping with the cold gray, place lid and slowly heat till warmed.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Butter both sides of two large sourdough bread slices.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">In large skillet on stive begin to brown first side of bread on medium low till starting to brown and crisp</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">On side-up bread surface, sprinkle slices with parmesan cheese and cover briefly with lid to help melt.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Once bottom side of bread is browned and parm sticking to top, flip bread over.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">To one slice add 1 slice of havarti cheese (halved to fit along bread) & cover briefly as needed to help melt.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">To the first slice with cheese add layer of cranberry sauce, and warmed turkey meat.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">On second slice of bread spread warmed stuffing layer and then mashed potato layer (both have gravy on them already) then top with the fresh spinach.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">On first slice with turkey, now add 2nd halved cheese slice, covering briefly with lid to begin melting cheese. </li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Add salt & pepper as desired.</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Then combine sandwich together, by flipping turkey & cheese side onto the stuffing spinach side, pressing together with a spatula to combine.</li><li id="zlrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">Cover sandwich with lid to melt all components for a minute or so.</li><li id="zlrecipe-instruction-13" class="instruction" itemprop="recipeInstructions">Cool sandwich briefly on wire rack to further crisp bread. </li><li id="zlrecipe-instruction-14" class="instruction" itemprop="recipeInstructions">Slice, serve and enjoy!!</li></ol><p id="zlrecipe-notes" class="h-4 strong">Notes</p><div id="zlrecipe-notes-list"><p class="notes">Using a more dense, multi-grain sourdough bread is best (I use San Luis Obispo Brand from my local store). <p style="text-align: left;">So simple to make and too easy to eat. I love the crunch the skillet-browned bread gives, not to mention the creamy Havarti that binds it all together for us. Spinach? Well, thought we should throw a vegetable in there somehow. Holiday leftovers never had it so good! We transform them into something almost better than they originally were. Though I might need to take a break from poultry for awhile, I can rest assured I&#8217;ll be craving this sandwich combo before Christmas. Luckily making a small turkey breast with stuffing isn&#8217;t too difficult, so I&#8217;m already looking forward to my next go round!</p>

In fact, I got the chance to make &amp; enjoy Turkey Day <em>twice </em>this week, score! One 19 pound bird &amp; a second large turkey breast later, and I&#8217;m currently in post-holiday-coma bliss. Growing up, <strong>Thanksgiving</strong> was the cooking extravaganza of the year and nothing has changed! I love all of the traditional fare associated with this day &#8211; warm comfort dishes with seasonal inspiration. I make a classic <strong>Southern-style menu</strong> including, but not always limited to: one large roasted birdie stuffed with <strong>cornbread dressing</strong>, rich <strong>Southern mashed potatoes</strong>, <strong>brussels with bacon</strong>, <strong>fried corn</strong>, <strong>fresh cranberry sauce</strong>, <strong>sweet potato casserole</strong>, <strong>stuffed celery</strong>, <strong>pumpkin &amp; apple pies</strong>, oh and let&#8217;s not forget the most crucial meal element &#8211; <strong>homemade, brown turkey gravy</strong>. I feel like I should go run 15 miles just writing down that menu, but it&#8217;s so very worth it!</p>
<p style="text-align: center;">The big bird was for a larger crowd of around 15, but the full turkey breast was perfect for a smaller gathering with enough for leftovers! <img class="aligncenter  wp-image-6490" title="Thanksgiving Dinner - 30" src="http://www.dinnervine.com/wp-content/uploads/2012/11/Thanksgiving-Dinner-30-1024x678.jpg" alt="" width="614" height="407" /></p>

<p style="text-align: center;">Roasting turkey always reminds me of this <strong><a href="http://www.youtube.com/watch?v=Spmqbs8YCW8">turkey carving scene</a></strong> in Christmas Vacation! Luckily, both of ours ended up juicy and tender, and though it&#8217;s not Xmas just yet&#8230;Clark would be proud&#8230;</p>
<p>The heart of this menu stems from my Mom and her traditional holiday fare. I make the cornbread dressing almost the same way she does, and can&#8217;t imagine changing its goodness one bit! Stuffing from the bird is one of the most flavorful, and my favorite parts of this menu. Well, maybe it&#8217;s a tie with the mashed potatoes with cream &amp; butter, which really deserve their own plate. Tackling a meal with this many components, especially for a large crowd, can be overwhelming and time consuming. I can say that after many years of trying to find a way to reduce the stress, the solution is prepping ahead! I pre chop, organize, and ready all of ingredients possible. Taking this dish-by-dish and pre-making the cranberries, pie and casseroles, is a huge TDay timesaver! Also, I do the large full bird in a <strong>Nesco Turkey Convection oven</strong>, which cooks a 19 lb bird in only ~ 4.5 hrs, and it turns out absolutely juicy with very crisp skin&#8230; just the way we like &#8216;em! It&#8217;s time to pour a celebratory glass of Champagne &amp; get our aprons ready&#8230; Here are some highlights from my Turkey Day table, enjoy!:</p>

Pre steaming, sautéing and then broiling the little brussels, allows them to lose their bitterness and they become salty sweet with the likes of delicious bacon! The smaller the brussels sprout, the more sweet and tender. I always try to pick the smallest ones and they are also, usually the most tender! of cornbread according to the corn meal package directions, but omitting any sugar, let cool, and then crumble coarsely in large mixing bowl.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In large skillet melt 1 stick of butter, sauté onion and celery till tender, add entire pans contents & remaining juices to bowl with cornbread, stirring to combine.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Add dry seasoning to taste including poultry seasoning, salt, pepper.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Add fresh thyme & herbox.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Taste to confirm spices are as desired & add slightly beaten egg, some chicken stock to moisten mixture for stuffing bird.</li><div id="zlrecipe-instruction-6" class="instruction-label" >Prep & Stuff the Bird:</div><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Bird should be thoroughly defrosted, removed from package, rinsed, internals removed, and patted Thanksgiving may be far off in the distance, but we&#8217;re going to get stuffing back into play with the likes of creamy <em>cheeses</em>, <em>maple cured ham</em> &amp; comforting &amp; savory flavors of <em>sourdough</em>, <em>thyme</em>, <em>garlic</em> &amp; <em>parsley</em>. This is a meal I developed when I was in college and its current, refined version is a true family favorite. I make it often &amp; would love to share it with you too! Usually 4-5/pack</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">About a dozen small skewers (larger than toothpicks, smaller than full length skewers)</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">Dill havarti cheese, sliced (couple slices/each fillet)</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">Sharp Cheddar Cheese, sliced</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1 can chicken broth, low sodium</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">Paprika, for sprinkling on top stuffed chicken before cooking</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">Slices of thin maple ham, or black forrest (1 thin slice/each chicken fillet)</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">2 T butter</li><li id="zlrecipe-ingredient-8" itemprop="ingredients">1 T fresh chopped parsley</li><li id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">1/4 cup shredded Italian cheese blend(like Parm Romano)</li><li id="zlrecipe-ingredient-14" class="ingredient" itemprop="ingredients">2 cloves fresh garlic, minced</li><li id="zlrecipe-ingredient-15" class="ingredient" itemprop="ingredients">5-6 dashes poultry seasoning</li><li id="zlrecipe-ingredient-16" class="ingredient" itemprop="ingredients">1/4 tsp paprika</li><li id="zlrecipe-ingredient-17" class="ingredient" itemprop="ingredients">1/4 tsp dill, strong">What to do...</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Soak wooden skewers in water</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Preheat oven to 375 with rack one level above center if possible.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Rinse chicken fillets, and pound thinner if necessary (they don't have to be completely uniform)</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">S&P chicken on both sides.</li><div id="zlrecipe-instruction-4" class="instruction-label" >Make Stuffing:</div><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Combine all stuffing ingredients, mixing well.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Add about 1/4 cup the chicken stock to moisten (or just enough to be able to handle it so it will stick together).</li><div id="zlrecipe-instruction-7" class="instruction-label" >Stuff & cook chicken breast fillets: </div><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Layout slices of both cheeses and ham, one for each thin, chicken fillet.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Layout each chicken slice on wax paper or clean surface and place one slice of ham centered over each fillet.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Next add slice of sharp cheddar and dill havarti to each fillet.</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">now add heaping handful of moistened stuffing to each in the center.</li><li id="zlrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">wrap up ends of chicken fillet up around stuffing, and fix with toothpicks crosswise so it will hold in stuffing. </li><li id="zlrecipe-instruction-13" class="instruction" itemprop="recipeInstructions">In a large shallow skillet on stove, melt 2 T butter & preheat.</li><li id="zlrecipe-instruction-14" class="instruction" itemprop="recipeInstructions">Carefully transfer the stuffed chicken breasts onto heated skillet and cook on med-low to brown initially. </li><li id="zlrecipe-instruction-15" class="instruction" itemprop="recipeInstructions">Sprinkle with paprika on top of each fillet.</li><li id="zlrecipe-instruction-16" class="instruction" itemprop="recipeInstructions">After about 8 minutes, deglaze with about 1/3 cup of white wine and continue to brown on stove. (you should see bottom and some of the sides of the chicken are beginning to turn whiter and cook through.</li><li id="zlrecipe-instruction-17" class="instruction" itemprop="recipeInstructions">Now add about 1/2 cup of chicken stock to bottom of pan & transfer to oven to finish cooking. If your skillet is not oven safe, place chicken, added broth & all cooking juices into a foil-lined 9x13 dish for oven to finish cooking.</li><li id="zlrecipe-instruction-18" class="instruction" itemprop="recipeInstructions">Continue to cook until chicken fillet is done, even at top, cheese is bubbly and stuffing and ham edges are crisp/slightly toasted. (about 10-18 more mins, depending on oven & chicken thickness)</li><li id="zlrecipe-instruction-19" class="instruction" itemprop="recipeInstructions">Remove from oven and let cool several minutes.</li><li id="zlrecipe-instruction-20" class="instruction" itemprop="recipeInstructions">Remove wooden skewers and serve!</li></ol><p id="zlrecipe-notes" class="h-4 strong">Notes</p><div id="zlrecipe-notes-list"><p class="notes">Taste stuffing once you've seasoned and add accordingly. The stuffing may seem concentrated with spice at first but it mellows once in the chicken and cooked.
Putting the skewers in the chicken can be a pain, so medium size work really well. if you only have longer, cut them with shears. <p style="text-align: left;">I make this every year at the request of my Dad for Father&#8217;s Day, and for friends every so often. And though it is not as comparable to an awesome, traditional Thanksgiving meal, this chicken is reminiscent of those comfort flavors, but in a healthier, easier, everyday version! Our fillets gain flavor from first being low skillet cooked &amp; deglazed with wine, but they stay very moist by finishing baking in the oven with chicken stock and juices. The stuffing has a savory tang from the spices and sourdough bread, so I highly recommend not changing the bread variety in this one! The top of our stuffed fillets should have a nice crust to them, so if you find yours need more of a toast, switch your oven to broil for a min or so at the end of cooking!
