for goddess’ sake

Spring is in the air! Okay, not technically, but it feels that way looking at the bright bouquet of daffodils on my counter. I love springtime and the gifts it brings: sunnier days, seasonal farmer’s market produce, daylight savings time, and the most impressive of them all -mini Cadbury eggs & jelly beans; I cannot…

bacon makes it better

There is nothing better than a classic, and when it comes to classic sandwiches, I don’t think there is one more desirable than a BLT. Simple and satisfying. Ripe tomato, meets salty bacon, meets toasted bread, meets crisp lettuce, and it’s married together with creamy mayo. I’ve been trying to eat more salad and work…

Sunni

I made this last night and it was great! I could not believe how much it actually tasted like a BLT. But with all of that healthy spinach. I will definitely make this one again. Thanks for the recipe.

Thank you Sunni! Glad you liked it. In fact, I had it again tonight! It’s semi addictive, but I love eating that much spinach, so I justify it! Thanks for checking out my site!

ballin’…

…how else would we spend the weekend?! Sometimes the day ends and cooking something over a hot stove just doesn’t work. It’s too warm and you wanna keep from your face melting off. Today was indeed, one of those days. Hot. I decided to keep things cool and make a take on a simple marinated…

summer dressed

Farewell Spring, because I am ready for summer and so is my salad. We’re going to call-on warm weather ingredients like fresh, farmer’s market strawberries, spinach, sweet corn, cucumbers and beets for one perfect bowl of salad goodness. We’ll dress to the occasion with a homemade poppyseed balsamic dressing. Who wants to slave over the…

Summer is really here…It is all about light, fun and easy recipes. Everyone’s busy with a sunny day picnic, a trip to the beach. Gee! I have to make sure the recipes I have are all summer-y. This would be a great addition. Thanks!

Danielle

As someone who makes this salad weekly during strawberry season (thanks to Lyndsy sharing the recipe), I can vouch for this one. And the dressing is so good you’ll want to drink it sans lettuce.

Thanks Dani & MyFudo! This salad really is a go-to amidst summertime, and I think if there is access to sweet & ripe strawberries, and really good summer, sweet corn, there is no reason not to bust this one pre-meal, or as a meal, or maybe more complete with a grilled balsamic checkin breast… or a fillet of salmon. And so on… I must be hungry! :) Balsamic and strawberries just seem to ‘work.’

Easter egg, chicken, potato salad…

Finally. Easter is approaching and what better way to embody spring goodness than with eggs?! (Perhaps carrots, but that’s an entirely different post…) I am a true egg salad fan. Not the questionable kind, pre-made at the grocery store that comes gratis with your sandwich. Instead a truly fresh version, non mustard/mayonnaise/relish drenched, egg salad….

Just a thought, but you could add some of the EASTER EGGS that you have colored with your children/grandchildren, etc., and add some color to the salad. Every year, I make “Easter Egg” sandwiches with the colored eggs. What makes it special is that the eggs have color that has “bled” through the shells, to color the whites of the eggs. Makes the sandwiches magical. :)
