Sweet Mint Iced Tea

Refreshing Mint Sweet Iced Tea! SImple & satisfying on a hot day!
What to get:
  • Fresh peppermint sprigs (several)
  • Black tea bags (I use large family size Lipton brand, for ice tea in pitchers)
  • 4 Cups water (for boiling)
  • 2 cups water for making simple syrup
  • 4 teaspoons sugar
  • 1 cup ice (to add into pitcher)
What to do:
  1. On stove in pot, bring 4 cups water to boil, add tea bag (if large) or more if smaller according to package directions, and remove form heat. Let steep about 5 minutes. (I let mine go longer and usually use an extra large tea bag). Let cool completely.
  2. In another small pot, slowly heat ~2.5 cups water and when hot, add and dissolve in the sugar and several mint leaves from a sprig. Let steep until cooled completely & sugar is dissolved (most Southern sweet tea calls for more sugar, feel free to add more to your preference).
  3. In large pitcher combine the 4 cups steeped tea, 2 cups of the sweet mint mix and 1 cup ice cubes. Stir and add a clean mint sprig into pitcher.
  4. Let chill in fridge for an hour or so, and serve over ice with mint garnish!
Notes:
Add more mint or sugar as desired, to taste. Typical Sweet tea will have more sugar and less water, making a more traditional 'simple syrup" I like mine less sweet when using the mint, as it gives extra flavor. If you want more sweetness, you can also add honey into individual glasses when serving.
