Homemade Granola

Serves: about 4 cups delicious granola!
 
Perfectly hard to resist, homemade granola with organic oats, almonds, brown sugar & dried cranberries! Addicting and a great way to start the day with something other than your average old cereal! Easy and nutritious.
What to get:
  • 3 cups rolled oats
  • 1.5 cups roasted almonds (sliced & chopped smaller)
  • ¾ cup shredded, sweetened coconut
  • 2 T whole, golden flax seeds
  • 2 T ground golden flax seeds
  • ¼ cup brown sugar
  • 3 T molasses
  • ¼ cup oil (I would use canola or EVOO)
  • ¾ tsp salt
  • ¾ tsp cinnamon
  • 1 tsp vanilla
  • *1 cup dried, sweetened cranberries (add after toasting granola)
What to do:
  1. Preheat oven to 275.
  2. In a bowl, combine oats, almonds, coconut, seeds, ground flax, sugar, salt, cinnamon, brown sugar.
  3. In second bowl, combine oil, molasses & vanilla (combine well)
  4. Add wet mix to oat mix, combine well.
  5. On a large, parchment-lined baking sheet, spread granola in a thin, even layer
  6. Bake for 1 hour and 20 minutes, stirring mix and re-spreading every 20 min to ensure browning
Notes:
This is best toasted low & slow! The dried cranberries are added after the toasting in the oven and this stores well in an air-tight container once cooled, or even in the fridge. Make a double batch-I promise it will be going fast!
