This looks so delicious. We can’t buy canned roasted toms here, jubt normal ones so I have to roast my own. When I do though I make a large batch, cover with olive oil and store in the fridge.

Thank you! I totally agree with you; it is funny how many people don’t eat these often, or aren’t sure who to cook them. They’re pretty easy luckily! I am hooked & glad they are in season again.

I know it isn’t healthy like your yogurt, nor traditional, but I’ve been doing a white sauce for fish tacos that everyone loves and there is never any left over after tacos…..

Mayo watered down with lemon/lime juice till it is runny and smooth. Kick it up with any spices you like, but I keep it white with nothing besides maybe a little garlic.
